Ultimate Oatmeal Cookie

Courtesy of "Cookies for Dinner". My mother discovered this cook book from a lady in UT. This lady sales flour! Yes...flour. She uses oats, seeds & wheat and grinds whole & healthy wheat. These cookies are very hearty!

3/4 c oil
1/2 c honey
1/4 c molasses
1/4 c water
1/2 tsp pumpkin pie spice
1/2 tsp salt
1/2 tsp baking soda
2 c rolled oats
1/2 c raisins or craisins
2 1/2 c grain mix flour

mix oil & honey-add other ingredients. I always mix the dry ingredients separate (whisk or sift) before adding to wet ingredients. Place on cookie sheet & flatten.

Bake on 350 for 8-10 min

Gooey Chex Mix

Wow! this is so yummy...I have a hard time just eating a little bit! I first ate this at a 4th of July BBQ...it was the snack passed around while we sat on lawn chairs watching the fireworks.
I'm so glad my friend shared this recipe with me.

Ingredients at a glance: butter, sugar, karo syrup, golden grahams cereal, rice chex cereal, cashes, M&M's

Mix the following ingredients in pan on stove top on med-high heat.
3/4 cup butter
1 cup sugar
1/4 cup water
1/4 cup light Karo

Boil to softball stage (a degree or two lower is better)

Pour above mixture over:
1/2 box Golden Grahams (4 1/2 cups)
1/2 box Rice Chex (6 cups)
1 pkg cashews

Stir together until cool (otherwise cereal sticks together).

Cream Cheese Frosting

1 (6oz) pkg of Cream Cheese
1/2 cup butter, softened
2 tsp vanilla
4 1/2 cups sifted powder sugar

Mix cream cheese, butter and vanilla. Slowly add sugar until smooth and creamy. Separate into bowls and add food coloring to get desired color. Ready to frost cookies or store in refrigerator.

Use this recipe to frost sugar cookies.

Sugar Cookies

My Christmas is not complete unless I get to make sugar cookies with my kids. This is something my Mother did every season. She'd invite all the grandkids over to bake and decorate cookies. I'm so glad I can carry this tradition on.

makes 4-5 dozen (approx 50) cookies

1 cup butter, softened
2 cups sugar
2 eggs
1 tsp vanilla
1 cup sour cream
4 1/2 cups flour (may need more)
4 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt

Combine butter, sugar, eggs, vanilla and sour cream. Mix until smooth.

In separate bowl combine dry ingredients and mix. Slowly add dry ingredients to wet ingredients. Mix until dough is soft but not sticky. Add more flour if needed.

Chill dough at least 1 hour. On floured surface (can use underside of cookie sheet) roll dough 1/8 to 1/4 inch thick. Use different shaped cookie cutters to cut out dough. Remove excess dough. Place on cookie sheet. Bake on 375 for 8-10 min (don't over cook them).

Cinnamon Rolls

My friend Kirsty came to my house and showed me how to bake these fabulous cinnamon rolls. They are melt in your mouth delicious! She has it down so good it takes her only 1 hr and 20 min start to finish! Now that's my kind of baking...

Easy but Impressive Cinnamon Rolls....If I can do it, anyone can...

Ingredients:
Dough Recipe:
1 3/4 c warm water
1/2 c oil
1/3 c sugar
3 Tbsp yeast

mix and let rest for 15 min

add:
5-6 c flour
2 eggs
1 1/2 tsp salt

Filling recipe:
1/3 c butter, softened
2-3 c powdered sugar
3 Tbsp milk
1 tsp vanilla

mix wet ingredients together, then fold in powdered sugar using a spatula. Keep stirring until smooth.

Directions:
Sprinkle flour over rolling surface to keep dough from sticking. Take 1/2 of the dough out of mixer and roll out 1/4 in flat. Spread softened butter evenly over top of dough. Sprinkle cinnamon evenly over entire surface. Follow with brown sugar, nuts or raisins. Roll up dough and seal by gently pinching along seam. Pat the roll to even it out. Use dental floss to cut the roll into evenly spaced slices, place on baking sheet that has been sprayed with Pam. Let raise for 5-10 min. Bake at 425 degrees for 15 minutes, until just browned on top. Remove from oven and immediately spread a generous dollop of frosting on each roll. Frosting will melt into the roll--the gooier, the better!

Chocolate Chip Scones

These scrumptious warm chocolate chip scones were made by Tammy. I served as a counselor to her in the Newtown Ward Primary Presidency. Our bi-weekly meetings were held at her house and she always provided a yummy treat for us. I love her version of these scones.

Ham and Cheddar Scones (original recipe...Tammy's variation Chocolate Chip Scones)

original recipe:
2 c flour
2 tsp sugar
1/2 tsp salt
1 Tbsp baking powder
1/4 tsp cayenne pepper
6 Tbsp (3/4 stick) butter, chilled
3 oz sharp cheddar cheese, shredded (1 cup)
4 oz ham, diced
1 egg
Scant 2/3 milk, plus 2 Tbsp for glaze

Preheat oven to 400. Toss the flour, sugar, salt, baking powder, and cayenne together in a large bowl or food processor. Cut the butter into several pieces and add them to the dry ingredients. Using a hand-held pastry blender, two knives, or the food processor, work in the butter until the bits are no larger than small grains of rice. Transfer the mixture to a large bowl, add the cheese and ham, and toss, separating any clumps of cheese that form.
Whisk the egg and 2/3 cup milk together in a small bowl, and add to the dry ingredients. Stir until the dry ingredients are moistened and a soft dough forms (the dough should be slightly tacky and crumbly). With lightly floured hands, gather the dough together. Using the palm of your hand, press it out on an ungreased or parchment-lined baking sheet to form an 8-inch round.
If you like your scones to have crisp edges, use a long sharp knife or a dough cutter to dived the round into eight equal wedges. Pull the wedges apart. If you prefer tender edges, leave the round intact and simply score the divisions with the knife. Brush with the 2 Tbsp milk, and bake until lightly browned and nearly doubled in size. 18 to 20 minutes. Serve warm.

Tammy's Chocolate Chip Scones:
Follow recipe above but omit cheese, ham and cayenne. Add chocolate chips before you add the wet ingredients. She likes her edges soft so leaves the eight equal wedges connected to each other.

Carmel Popcorn

a family favorite

1 c white sugar
1/2 c karo syrup
1 stick butter
1 c brown sugar
3/4 c milk
1 tsp soda

Slowly melt sugar, brown sugar, karo syrup, milk and butter. Test a drop of a carmel in cool water. If it makes a firm ball than it is done. Remove from heat and add soda
