Turkey Breast Of Wonder (Crock Pot)

Time: 5 min. prep + 8-9 hours cooking
Yield: 12 servings
Recipe from my lovely sister Jen Willahan

***NOTE: Make sure you buy a turkey breast small enough to fit in your crock pot.*** 

1 (5-6 pound) turkey breast
1/2 C orange juice
1 (14 ounce) can whole cranberry sauce
1 (1 ounce) package Lipton Onion Soup Mix
salt and pepper

1. Make sure your turkey is completely thawed. I let mine hang out in the fridge for a couple of days after I purchase it frozen. Set it on a pan, so you don't have juices running all over when you open up the bag. Cut a hole in the top of the bag and remove the packaging. Some turkey breasts come with a gravy pouch inside, be sure to remove it if yours happens to come with one.
2. Place the old bird in the crock pot.
3. Pour yourself 1/2 cup of orange juice. Add one can whole berry Cranberry sauce and one package Lipton Onion Soup mix.
4. Mix the ingredients together and pour them over the top of the bird.
5. Sprinkle a bit of salt and pepper over the top. Cover the crock pot and cook on low for 8-9 hours,
or until a meat thermometer stuck into the center of the bird reads 180 degrees. You can see I got mine a bit past 180. Don't like, turn me into the poultry police or anything, ok? It still turned out wonderful, juicy and moist.
6. Remove the turkey breast to a plate and cover it with tin foil. Let it rest for about 5 minutes. Then carve it (or shred it) up and enjoy.

Baked Beans

My mother makes the best baked beans. I love the sweet flare the pineapple adds. These are the perfect side dish for a BBQ and they serve a large crowd. Enjoy!

2 large cans pork n' beans
1 large onion, chopped
1 can pineapple chunks
1 green pepper, minced
1 can mandarin oranges
1 can fruit cocktail
1 c brown sugar
1 c ketchup
3 t mustard
2 t worcestershire sauce

Brown Bacon in pan. Add chopped onion & pepper. Simmer 8 min. Place beans, sugar, ketchup  and worcestershire sauce in large casserole dish. Add bacon & onion mixture, including drippings. Bake for 3 hours at 320. Stirring occasionally.

1 can red enchilada sauce
1 can coke
1 Tbsp (or less) cumin
1 c brown sugar

place all in crock pot. add 1 can cream of mushroom to add creamy

Crockpot Mango Chicken

I got this recipe from the blog, "The Recipe Club". I attended the same HS as these girls. I love that they get together to share favorite recipes! Love them.
4 boneless, skinless chicken breasts
2 cups tomato based mango salsa (love the one from Costco)
2/3 cup brown sugar
1 TBSP salt

put all ingredients in the crock pot on low for 8-10 hours or high 4-6. Shred chicken. Use in tacos, burritos, enchiladas, nachos, etc.

This is a great recipe to make in bulk and freeze leftovers. My very picky kids don't like this so I froze individual portions for myself. Makes fabulous lunches for me! My husband tolerates it. I guess they don't like anything with a tomato base! They are missing out!

Hawaiian Chicken--Easy Crock-Pot meal!

6lbs boneless, skinless chicken breast halves
2-16 oz cans pineapple slices, drained
2-15 oz cans mandarin oranges, drained
1/4 cup cornstarch
1/2 cup brown sugar
1/4 cup soy sauce
1/4 cup lemon juice
1 t salt
1 t ground ginger
1/2 t ground red pepper

Serving Day
Steamed rice
Toasted almonds
Green pepper chunks (optional)

Recipe yields 8-10 servings

Cooking Day instructions
Place chicken in freezer bag. Mix together fruit, cornstarch, sugar, soy sauce, lemon juice, salt ginger, and ground red pepper. Pour over the chicken in bag. Freeze, using freezer bag method.

Serving Day instructions
Thaw chicken mixture. Place in Crock-Pot, cover, and cook on low for 4-5 hours or on high for 2-3 hours. Add green pepper to Crock-Pot one hour before serving, if desired. To serve, spoon over steamed rice and top with toasted almonds.

My tips: I used Very Teriyaki instead of Soy Sauce because I had it on hand. It was delicious. I also, used chicken with skin on and bone in. (It was on 99 cents a pound so I couldn't pass it up). I rinsed it and pulled skin off before placing it in crock-pot. Once chicken was mostly cooked and tender I pulled it off the bone and let it simmer in crock-pot for another 20-30 min. I did not do the freezer option because we wanted to eat it the same day I prepared it. I recommend putting the chicken in crock-pot first. Mixing other ingredients in separate bowl and adding them on top of chicken. I also used red peppers instead of green for color!
It was delicious. We all loved it and will make it again.

Brittany's Pork Roast

1 can cranberry sauce
1/2 cup orange marmalade
1 orange, juiced and zested
1/8 tsp ground cloves
1/8 tsp nutmeg
1/4 cup honey

Mix all the ingredients listed above. Tenderize roast and place in crockpot. Cover with sauce. Cook for 6 hrs on low. Strain juice to make gravy. Serve with mashed potatoes and steamed broccoli.

BBQ Sauce

This is the perfect BBQ Sauce for kids. It's sweet and yummy. 

3/4 c brown sugar
1 c water
1 c ketchup
1 1/2 T liquid Smoke

mix sauce ingredients together and stir until sugar dissolves.

My favorite dish with this sauce is Crockpot BBQ chicken. After rinsing chicken put in crockpot. Stir bbq sauce in coating all of the chicken. Cook on low for several hours or on high for less!
DELICIOUS....serve with baked potatoes and a veggie like steamed broccoi
