This recipe was given to me by my sister. I follow the directions exactly as it reads, even setting my timer (see below) to the exact minute has instructed. It always turns out fabulous! I use white wheat and grind the flower myself. My kids love to help with this. From start to finish it takes 1.5 hours.
Whole Wheat Bread
Place the following ingredients in mixing bowl:
7 Cups wheat flour
2/3 C gluten (can be substituted with 2/3 cup flower)
2 ½ T yeast
Add 5 cups hot water (activates yeast). Place lid on bosch and mix 1 minute. Rest 10 minutes with lid on.
Add the following ingredients to mixing bowl:
2/3 c oil
1 c sugar (2/3 c honey)
2 T salt
2 ½ T lemon juice
Mix 1 minute. While mixing add flour 1 cup until dough wipes bowl clean (approximately 5 cups flour). Mix/knead on high for 10 minutes
Preheat oven to 200 and turn off oven. Put dough in loaf pans and let rise 15 min. Bake on 350 for 30 minutes.
