Homespun Almond Fruit Granola
3 cups rolled oats
3 T whole wheat flour
1 cup slivered almonds
1 cup dried fruit of choice, unsweetened & chopped (I used craisins)3 cups rolled oats

1/2 cup pure maple syrup
1/3 cup coconut oil
1 t almond extract
1 t cinnamon, or to taste
Preheat oven to 300 F. Blend oats, flour, almonds and fruit together in a large bowl. In a separate bowl, whisk together maple syrup, coconut oil, almond extract, cinnamon and salt. Add liquid mixture to the oat mixture and stir until well coated. Spread on a large cookie sheet lined with parchment paper. Bake for 60 min. Turn or stir granola halfway through baking to break up clumps. Cool before serving. Store in an airtight container.
Coconut & Macadamia Granola
4 cups rolled oats
1/3 cup whole wheat flour
1/2 cup shredded unsweetened coconut
3/4 cup chopped macadamia nuts (I don't eat Macadamia nuts, so I use almonds or cashews)
salt to taste
2/3 cup pure maple syrup
6 T coconut oil
1/2 t real vanilla extract
Preheat oven to 300 F. Blend oats, flour, coconut, nuts and salt in a bowl. In a separate bowl, whisk together maple syrup, coconut oil and vanilla until well blended. Stir in oat mixture. Place the mixture on a large baking tray lined with parchment paper. Bake for 30 minutes. Turn or stir granola halfway through baking to avoid burning. Cool completely before serving. Store in an airtight container.
