Red Thai Curry Dish
Sauce:
2-3 Tbsp Red Thai Curry paste (best to purchase from an asian market or use Thai Kitchen)
2-3 cans coconut milk
2-3 cloves garlic, minced (the best ratio is 1 clove to 1 can coconut milk)
1 tsp fresh ginger
a squeeze of fresh lime juice
1 Tbsp Fish sauce
2-3 Tbsp sugar (add to taste)
2 tsp salt
saute garlic & ginger in oil until soften. Do not burn. Add the rest of the ingredients and bring to a low simmer.
To complete the meal sauté the following:
2 lbs chicken, sliced
white onion, sliced into skinny strips
zucchini, sliced
carrots, sliced
red pepers, sliced
Other things to add:
sugar snap peas
peaches
bananas
peanuts or cashews
Top with whipping cream for kids!
Serve over rice
