Zucchini Nut Bread

Our neighbors have a beautiful farm in Lehi. Often Brother Jones will ride on his 4 wheeler around the neighborhood handing out fresh vegetables from their garden. His sweet wife shared this recipe when they gave us a very large zucchini! I'm so grateful. The spices in this recipe make it delicious!

3 eggs
2 c sugar
2 c grated zucchini
1/2 c applesauce
1/2 c oil
1 t vanilla
3 c flour (2 wheat, 1 white)
1 t salt
1 t Baking soda
1/2 t Baking powder
1 t cinnamon
1 t nutmeg
1/2 t allspice
1/2 t cloves
1/2 t ginger

Cream eggs & sugar until light & fluffy. Add zucchini, applesauce & oil.  Sift together dry ingredients. Add wet mixture. Mix lightly until well blended. Bake at 325 for 1 hour. Makes 2 loaves.

can add: nuts, raisins, chic chips, etc.
