I always walk out of costco with a 5lb bag of big carrots. I was excited to find a delicious recipe to use them in. This is so flavorful & very filling.
3 T oil
2 tsp curry
8 medium carrots, peeled & thinly sliced
4 stalks celery, thinly sliced
1 medium onion, chopped
5 cup chicken broth
1 T lemon juice
1/2 tsp salt
pepper to taste
cook oil & curry in large saucepan over medium heat, stirring, until fragrant, 1-2 min. Stir in carrots, celery & onion; toss to coat in oil. cook, stir frequently, for 10 min.
Stir in broth, bring to a boil. Reduce heat & simmer until the vegetables are very tender, about 10 min. Remove from heat; let stand 10 min.
Lay paper towel over the surface of the soup to blot away oil that has risen to top. Discard the paper towel.
Working in batches transfer soup to a blender and puree (use caution b/c it's hot)
Return to pan, until heated through. Season with lemon juice, salt & Pepper
