1 cup cooking oil
2 cups sugar
2 well beaten eggs
2 t. vanilla
3 cups flour
1 t. soda
1/2 t. salt
3 cups chopped peeled apples
1 cup chopped walnuts
Combine oil and sugar, adding eggs and vanilla. Add dry ingredients.
Stir in apple and walnuts. It will be difficult to stir at this point.
Bake 1 hour and 15 minutes in 300 degree oven. Cool 10 minutes.
With a fork or knife, make holes in the cake.
Caramel Topping:
1/4 lb. butter, 1/4 cup milk, 1 cup brown sugar and 1 t. vanilla
Melt butter and sugar in double boiler or regular pan, blending well then add milk. Bring to a full boil, stirring for a little while. Add vanilla. Pour over the cake. It is best if set overnight. The liquid will fill in the holes of the cake.
