Baked Brie with caramelized onions and apples

courtesy of my cousin Brittany. She took a cooking class at Thanksgiving Point (I'm jealous!).  I loved this because it's different. The flavor's compliment each other very well. Tasty!

Brie cheese 2.5 lb (can get from Costco) 
2 large firm apples (fuji or granny smith), thinly slice leave peel on
1 small red onion, thinly slice
1/2 c craisans
1/4 c balsamic vinegar
1/4 c brown sugar

Slice baguette bread 1/2 in thick (approx 30 slices). Brush olive oil both sides, place on cookie sheet and broil 2-3 min until golden brown/toasted. (can do this a day in advance, store in slip lock bag after they've cooled) 

To prepare brie cheese place in oven after removing casing. The white casing is edible leave it on. Wrap in tinfoil (seems on top) place in oven on 350 for 20 min until soft and gooey!

Put sliced onions & apples in sauté pan on medium heat for a couple of minutes to get them tender. Add craisins. Mix in sugar and balsamic vinegar, stir constantly, turn heat up if needed until it caramelizes and liquid is gone. 

Assemble...On top of toasted baguette spread cheese and a dollop of carmelized onions/apples. ENJOY!
