3 Bean Stew

adapted from Biggest Looser

This was the easiest meal to throw together. I actually served it for lunch with fresh guacamole. The soup was surprisingly flavorful. It was delicious and very satisfying. Even my kids ate it! I changed the name to 3 Bean Stew.

1 Tbsp Olive Oil
1 Large white onion, chopped
1 Tbsp Garlic, minced
2 can bottled garden fresh Tomatoes
1 tsp cumin
1 tsp chili powder, optional
1 tsp red chile flakes, optional
3 cans of beans (white, red/kidney & black beans), rinsed & drained
4 cups chicken broth
1/4 cup cilantro
3 cups fresh baby spinach

In a 4 qt saucepan, heat oil over medium heat. Add the onion and cook for until translucent. Add the garlic and cook for 1 minute longer.
Add the tomatoes, cumin and other seasoning. Simmer for about 5 minutes. Add 3 cups of the beans and 3 1/2 cups of broth and bring to a boil. Reduce to a simmer.
Meanwhile, place the remaining 11/2 cups of beans and 1/2 cup of broth in the blender. Add the cilantro and puree until smooth.
Add the puree to the stew. Add the spinach and heat just until wilted.
Stir well and serve hot
