Egg Muffins

We tried this recipe of Martha Stewart's. My kids were not excited just by the looks of them!. I varied the recipe a bit because I know our family doesn't like a soft yoke. I actually beat the eggs before filling the muffin tins. We re-named them egg muffins! The bacon is a must. It's a strange bite because you either end up with too much bread or too much egg in your mouth. I want to try these with a pastry dough instead of bread.

Line muffin tin with bread. I used a circle cutter to cut bread. And placed it in the bottom of the muffin tin. Adding more bread around the edges as needed. I pushed it all together to form a muffin tin. After whisking the eggs and seasoning them (salt & pepper), I scooped enough egg into each muffin tin. Add slices of bacon...I think it would work best to cut the bacon in small pieces and add them to the top after it's baked for awhile.
