White Bean Chicken Chili

This recipe reminds me of Cafe Rio's tortilla soup. I loved every bite! Courtesy of Cherie Musick.

Sauté the following:
2 Tb vegetable oil
1 chopped onion
2 garlic cloves, minced

Add canned goods:
1 (14.5 oz) can chicken broth
1 (18.5 oz) can Tomatillos, drained & chopped (or Salsa Verde)
1 (16 oz) can diced tomatoes
1 (17 oz) can diced green chilies (or 2 small cans 4oz)

Add spices:
1/2 tsp Oregano
1/2 tsp ground coriander seed
1/4 tsp Cumin

Bring to a boil and simmer 10 min.
Add:
1 can corn
1 (15 oz) can white beans
1 lb chicken, cooked & diced
fresh cilantro & lime juice to flavor

Simmer 5 minutes
Season with salt & pepper to taste

Garnish with sour cream, sliced avocado & chips
