Wraps are the new trendy sandwich and this is a favorite with my daughter Lara. Just like many children she gets fixated with one particular recipe and would like to eat it every day. She also enjoys assembling the wrap herself.

Marinate and cook the chicken the night before or you could buy some ready cooked marinated chicken.

Ingredients

  • 2 skinless, boneless chicken breast fillets, approx 1/2 pound total weight
  • 1 tablespoon canola oil
  • 4- 7 inch flour tortilas
  • 4 tomatoes, cut into strips
  • handful shredded iceberg lettuce
  • 1/4 cup mayonnaise
  • salt and freshly ground black pepper, to season

Marinade

  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic, lightly cloved
  • 1 tablespoon dark soy sauce
  • 1 tablespoon honey
  • 1/2 tablespoon light brown sugar
  • 2 tablespoons canola oil

Directions

  1. Score the chicken with a sharp knife. Mix together all the ingredients for the marinade and marinate the chicken for about 20 minutes.
  2. Brush a grill pan with oil and put over medium heat. Remove the chicken from the marinade and, when the pan is hot, grill the chicken for approximately 4 minutes each side or until cooked through. Then cut into strips and set aside.
  3. Spread each tortilla with 1 tablespoon of mayonnaise and arrange the chicken strips in a line down one side of the tortilla, about 1 1/2 inches from the edge of the tortilla, with parallel lines of shredded lettuce down one side and tomato strips down the other. Roll up and cut each tortilla in half and wrap in foil to serve.
