Parmesan Bread

4 cups warm water
4 Tbsp active dry yeast
1/4 cup granulated sugar
1/4 cup butter, softened
4 tsp salt
1 cup grated Parmesan cheese
7 1/4 cups flour

Sprinkle yeast over the water in a large bowl. Let stand a few minutes, then stir to dissolve. Add sugar, butter, salt, all but 1 Tbsp of the Parmesan cheese, and 6 cups of the flour. Beat at low speed until smooth. Beat in remaining 1 1/4 cups flour. Cover the bowl and allow to rise for 45 mins. stir bread down and beat 25 strokes with a wooden sppon. Pour into a lightly greased, 2-qt oven-proof bowl and sprinkle with reserved 1 tablespoon Parmesan cheese. Bake at 375 degrees for 45 to 55 mins, or until nicely browned.
