Herb & Apple Stuffing

16 c 1" bread cubes (best to make your own by drying out several breads such as pumpernickel bread, hearty hearth bread wheat and white)
1/2 stick butter
2 large yellow onions, diced
2 granny smith apples, cored & diced
2 T chopped parsley
1/2 t kosher salt
1/2 t pepper
1 c chicken stock
1/2 c almonds, sliced & blanched/toasted

Pre-heat oven to 300. Spread bread cubes in baking sheet cook 7 min. In large saute pan melt butter. Add onion, celery, apples, parsley, rosemary, salt and pepper. Saute 10 min until soft. Combine bread cubes & veggies in large bowl. Stir in chicken stock & almonds. Put in baking dish. Bake at 325 for 30 min
